Corn is the cereal with highest production worldwide and is used for human consumption, livestock feed and fuel consumption. Maize and Wheat are considered as a staple diet in various countries across the globe. Various technologies are currently being used for processing industrially produced maize/ wheat, etc flours and corn meal.
Each grain consists of three parts: the Bran, the Endosperm and the Germ. During the commercial processing of refined flour, manufacturers remove the outermost coating, the Bran. Removing the Bran creates a finer texture in the finished product, but it also removes most of the grain's healthy fiber. The Endosperm contains the bulk of the kernel's carbohydrate content; it is where the seed stores its energy in the form of starch. Like the Bran, it is also removed during commercial production. However, if you grind at home, you retain the Endosperm.
